Making breakfast can be fun!

Breakfast is one of the MOST important meals of the day.  Personally I believe eating small meals all day is super important making all meals important but breakfast is one of those things you really need to get in your body within one hour of waking up.  It is like putting gas in your tank.  NO GAS, NO GO...same should apply to your body.  NO FUEL, NO GO...however your body is smart and it will go no matter what but at a price. Eating a good solid breakfast will help fill up your tank and get you started on your day.  It will give your metabolism a little boost and prepare you for the day!  Here is a fun breakfast for you and the kids.  I will show you how to modify it to make it even more healthy as well.

1. Pick out a brand of turkey sausage and cook it all the way through.  This

2.  Spray muffin cups with non-stick spray, I use Olive Oil spray by Pam
3.  Load tortilla chips into each muffin cup (2 chips per cup)-
HEALTHIER OPTION: use whole wheat tortilla chips vs the yellow corn chips, any size will do
4.  Add one egg to each muffin tin to cover the tortilla chips
HEALTHIER OPTION: use egg whites, about 3 spoon fulls
Yes one BROKEN egg w/o shell per cup! :)


At this point you may want to preheat your oven to 350!
JUST LIKE THIS....






5.  Place a spoonful of salsa in each cup, if you like salsa, personally I really love it.  It is a great low fat, low cost garnish for tons of foods.

You can add the salsa at the end before the go in the oven but I just did it while waiting for the sausage to finish cooking just to have it done :)






6.  When the sausage is finished cooking you will take them off the stove and cut them lengthwise first, then in 1/2.  I cooked WAY too much, but really you get a lot in one pkg and these were on sale at Martin's in VA so I picked up two.  You will only need one 1/2 of a link per muffin cup!





7.  Cut links...(length wise) then you still have to half these!









8.  Pre-oven filled muffin tins!
