Kale and Apple Quinoa Salad-thanks to Fresh Market

Quinoa is a super food!  You can find it at most health food stores like Whole Foods, Fresh Market and even at the newly designed Krogers here in Richmond.  This recipe came from an ad for Fresh Market Foods in Richmond! 
We do not have photos to share but here is the recipe:

2 tsp extra virgin olive oil
1 onion, chopped
2 cloves of garlic smashed and (chopped)
1 c kale leaves, stems removed
2 c quinoa cooked and drained
1 apple, cored and chopped
1/4 c raw pecans
1/4 c dried cranberries
1/2 a lemon juiced
Salt and pepper to taste

Heat your oil in a large skillet over med heat and add onions and garlic allowing it to cook for 2-3 minutes.  Onions should be translucent.  Add your kale, cook for another 4-5 minutes until the kale is soft.  It should turn a bright green.  Remove from heat and cool.  Toss onion-kale mix with your cooked quinoa.  Add all remaining items in your list of ingredients.  Chill or serve right away.
