1. Pick out a brand of turkey sausage and cook it all the way through. This

2. Spray muffin cups with non-stick spray, I use Olive Oil spray by Pam
3. Load tortilla chips into each muffin cup (2 chips per cup)-
HEALTHIER OPTION: use whole wheat tortilla chips vs the yellow corn chips, any size will do
4. Add one egg to each muffin tin to cover the tortilla chips
HEALTHIER OPTION: use egg whites, about 3 spoon fulls

JUST LIKE THIS....
5. Place a spoonful of salsa in each cup, if you like salsa, personally I really love it. It is a great low fat, low cost garnish for tons of foods.
You can add the salsa at the end before the go in the oven but I just did it while waiting for the sausage to finish cooking just to have it done :)
6. When the sausage is finished cooking you will take them off the stove and cut them lengthwise first, then in 1/2. I cooked WAY too much, but really you get a lot in one pkg and these were on sale at Martin's in VA so I picked up two. You will only need one 1/2 of a link per muffin cup!
7. Cut links...(length wise) then you still have to half these!
8. Into the oven the go for about 12-15 minutes or until the egg is cooked and no longer runny. Now in this method of pre the egg is full in the cups so the yolk will come out cooked like in a Hard boiled egg so if you do not want that then you must beat the egg before you add them or mix them up in the cup the best you can.
All finished and here they are, just use a knife to pop them out and they are YUMMY!! ENJOY. You can be eating these guys in roughly a half hour!
The idea came from a recipe on the biggest loser but I had to modify mine a bit b/c the recipe from the show didn't work well for me at all b/c they fell apart and became a HUGE mess. These worked MUCH better. Oh and you can add a little cheese on top AS SOON as they come out of the oven if you like!
